anyone know of a good cookbook for kids with food allergies?

my 14 month old has severe food allergies. so far he's allergic to eggs, nuts, wheat, oats, and soybeans.if he eats any of these or that conains any of these he turns maroon, breaks out in hives all over,his mouth and parts of his body swell up n he can't breathe right. its pretty scary seeing your baby like that. its been really hard to find foods that doesn't contain any of these. i need to find a good cookbook thats specifically for kids with food allergies…any suggestions?

Hi, I have celiac disease (wheat/gluten allergy) and am allergic to soy. I use Bette Hagmans Cookbooks because although everything is pretty much just gluten free she tells you how to use the recipes by substituting safe ingredients for your child in place of the eggs, and soy. The nuts in all her recipes are optional and she teaches you how to use egg replacer in her recipes. She has many cookbooks out…I have about four and there are still more out there. And her recipes are easy, even for me and I am just starting to learn to cook all these different ways too. Amazon.com is the easiest way to find all her books in one place. Also, a good website is glutensolutions.com, they sell pre-made food and you can check off you son's allergies and it will show you the products that are safe for him to eat. Also all the ingredients for each item are listed so you can double check for everything as well. Hope this helps!

healthy eating recipes for cooking with kids?

Hi, Looking for fun and interesting recipe ideas. I will be taking part in a summer camp and want to spent 3 activity days on healthy eating, however, would like to vary it from the usual make a fruit salad. Does anyone have any different recipes? I will be teaching a large age range so need recipes suitable for all ages, or recipes directed at both younger or older ages. Thanks

Stuffed Chicken Breast

Ingredients:
4 small boneless, skinless chicken breasts
1/4 teaspoon each: salt, onion powder and dried dill weed
1 (10 ounce) package frozen asparagus spears, thawed and drained
1/2 medium red bell pepper, seeded and cut into thin strips
Mock Hollandaise sauce
2 tablespoons reduced-fat margarine
1 tablespoon all-purpose flour
1/4 teaspoon salt
2/3 cup non-fat milk
1 egg yolk
1/2 teaspoon grated lemon peel
2 teaspoons lemon juice

Ingredients:
Heat oven to 375 degrees. Flatten each chicken breast to 1/4 inch thickness between waxed paper. Mix salt, pepper, onion powder and dill weed and sprinkle on top of chicken breasts. Place 1/4 of the asparagus spears and pepper strips on one end of the chicken breast. Tightly roll each chicken breast and secure with toothpicks. Place chicken seam side down, on baking pan that has been sprayed with nonstick spray. Cover and bake about 30 minutes or until chicken is no longer pink.

Mock Hollandaise Sauce
Heat margarine in a small saucepan over low heat until melted. Stir in flour and salt and cook over low heat until smooth, stirring constantly. Remove from heat. Mix milk, egg yolk and lemon juice until smooth and stir into flour mixture. Heat to boiling, stirring constantly.

Makes 4 Servings
Serving Size: 1 stuffed breast

Total fat: 6 grams
Saturated fat: 1 gram
Cholesterol: 122 mg
Sodium: 441 mg
Carbohydrate: 8 grams
Protein: 32 grams
Dietary fiber: 2 grams

husband says I am a bad cook. I want to learn?

Any suggestions for easy recepies. The catch is we don't eat vegies(except potatoes or tomatoe sauce), chicken or seafood.
Is there a website for beginner cooks?
or kid friendly recepies … since, we don't eat a lot of the poplular stuff etc.
ohhh I soooo read cookbooks and recepies on line… it's just no matter what I make… no matter what it is… if he doesn't make it himself he doesn't like it or says its okay. Granted I know I am not the best cook… (never made homemade mash potatoes.. bec. I like the instant ones better…with lots of velvetta and bacon bits) etc. But, I want my newborn son… to grow up saying my mommy is a great cook.. So, I want to learn to do better. that's all. Didn't need the lazy comments etc. ty though

First of all, shame on him for saying that! :( I've definitely made my mistakes in the kitchen too! But hey, we all have to begin from some where, right? Here are some suggestions:

-Subscribe to the Taste of Homes magazine! I looooove this magazine. They are entertaining, fun to read, and have easy, award-winning recipes. Of course, not every recipe will be what you want (I'm selective too!) but I think there's enough that I'm willing to try! -Go to a bookstore (or to Amazon) and buy cookbooks that have easy-to-make recipes. One of my favorites is a cookbook that has 4-ingredient recipes. -Sign up for cooking classes; you can find them in either the yellow pages or sometimes colleges do a "Continuing Education" and cooking classes are among the list of choices.

-If the husband doesn't like your cooking, have him help you! He'll have less to grumble about. ;) (Make a date out of it. Find a recipe you both would like to try, go to the store to buy the ingredients together, then go home to make it).

-I peruse yahoo's food page every so often to find new ideas. Or sometimes if I have an idea of a recipe that I'd like to try, I'll do a search online and pick the best one.

One of these days your husband will love the things you prepare. The fact that you're willing to try harder proves that you will one day be a great cook. Good luck! :)
