Easy Fast Dinner Recipes

 When TV was young the moms depicted on the shows would wear pearls and dresses while cleaning house, then cook a complicated meal while dolling advice to the kids. That wasn’t just on TV, it was a reflection of real life. But the 21st century world is one of amazing technology and lives that are much more fast paced. Everyone’s on the look out for easy fast dinner recipes that give TV mom results without all the work. The Pilgrims didn’t have a good source for such simplicity in food, but they didn’t have the Internet either. There are a lot of sources on line to provide help to the busy family looking for a quality meal.

One steak can go a long way. Change the sides for different meal experiences. Change the spices for a trip around the world of food. Begin the adventure with a super large flank steak. For Monday add roasted potatoes and a tossed salad. Make Fajitas on Tuesday with some salsa and hot spices. On Wednesday make it Asian with some Teriyaki sauce, rice and vegetables. Thursday go back to the steak and salad, this time with mashed potatoes and asparagus on the side. Friday is the day for some pita bread and Greek spices. That’s right, Gyros. That’s one meat for five meals.

What, there’s even more to do with the steak? OK, get the plates and forks ready. Do southwestern steak with black bean wraps, or lentil and orzo salad with flank steak smothered in feta cheese . Now add another meat, and the variety is even more endless. Pork can be a roast, or ribs, or chops. The possibilities are endless.

With a little clever planning all the meals for the week can be cooked on the weekend, then heated and served in minutes. Plan an entire menu for a month then buy all the necessities for some good savings too. The children can learn about cooking too. Put them in charge for a week. Rotate days amongst the family.

And you thought easy fast dinner recipes were hard.

    Hi! Well, it depends on what you enjoy… If you like italian food, I would say making some sort of pasta with meat sauce, and maybe some mircrowave veetables would be a nice quick 15 minute dinner. If you like mexican..tacos would be a great and quick alternative! You could even add some tomatoes and lettuce and as many sides as you would like. If your kids are picky eaters I would recommend maybe making some microwave chicken nuggets and give them some fresh fruit and milk with that. These are just a few quick yummy and easy suggestion!

    7 Minute Dinner Recipe:

    In a sauce pot, boil 2 cups water

    once boiling…immediately add in the following order:

    2 cups instant brown rice (Minute Maid now makes)
    1 cup frozen veggies (Zen Garden by Europe’s Best is good)
    1/2 cup pre-cooked roasted chicken strips (Lilydale Brand is excellent)

    1 Tablespoon butter
    pinch salt

    Put lid on and turn to low for 5 min.

    Dinner – done. Turn onto plate or dish, drizzle with plum sauce or sweet n sour sauce.

    We’ve done cheese quasadillas and soup. Just cut up or shred some cheese that you like and put on the flour tortillas, fold over and put under the boiler. If you want you can then turn over and do the other side too. Very fast. Dipped in soup or chili yumm.

    Another family favorite is "Build a Mountain". Heat up some chilli, have bags of salad greens, shredded cheese, avacado, dressing, tomato, tortilla chips and whatever else you want.
    Put some tortilla chips on the bottom of the bowl or plate then chili on top. Next salad and then do all the add ons. Quick and easy.

    We also like BLT’s for dinner. I use the Butterball turkey bacon. Just cook it up, toast the bread and pile with the tomato, lettuce, mayo and avacado if you like.

    Salmon over greens. This is a quick one I came up with one day and hubby loved!
    Start with salmon fillet. Cook in a bit of oil on high then turn down the heat. Cook fish as you would usually until it flakes with fork. Make sure to de-bone if needed ahead of time. I take the skin off in the pan since when it heats its easier to get it off. Then serve over a bed of greens. You can buy the baby spinnach mix. I also glaze pecans or walnuts and toast them ahead of time to sprinkle ontop. You can also do crushed ritz crackers ontop. I drizzle some honey or vinegarette on the salmon while cooking too. You can experiment and decide what flavor you’re going for.

    Stir fry is also fast and easy. You can get the freezer kit things where all you do is throw everything in a wok. You can also get some things like cabbage or bean sprouts, rice, water chestnuts, baby corn, peas in the pod, ginger, and a meat. I usually do beef but you can do pork or chicken too.
    Get some sesame oil or teriyaki sauce, Again whatever flavor you’re going for. Sometimes I throw some peanuts in there too.

    Cooking meals ahead of time works well too then just pull them out and heat em up.

    Shrimp Scampi (hmm that sounds really good right now lol)

    4 oz pasta (usually the rottoni little tube like kind)
    3 T olive oil
    2-3 minced garlic cloves
    1T cut up parsley (you can use scissors)
    1 lemon
    1 package of shrimp (I use medium you can even get it shelled and cooked. I get it either way.)
    1T butter
    Parmesan cheese

    Cook the pasta, drain and set aside or at the same time (usually boil for 7 minutes is perfect)
    Put some butter in pan and saute shrimp and garlic on medium (shrimp should turn opaque or not clear. )

    Take out of the pan and put pasta, shrimp, garlic and olive oil in bowl. Mix, add pepper to taste. Sprinkle with parsley or put on the side. Serve with a lemon slices and the parmesan cheese.

    You can also have garlic bread with this. We like to saute the garlic in butter and then dip toasted french bread slices in one side down. You can dip the other side if you want.

    Grilling is a great quick meal too. The night before is best if you want to marinate the meat. Cut up veggies like large pieces of green or red bell pepper, onion, and get some mushrooms. soak skews in water for a few hours. Then thread everything on and brush with olive oil. You can use a grill mates seasoning or salt and pepper. Grill until the meat is cooked.

    Baked Spaghetti

    Use 7 oz. spaghetti/cooked and drained
    1 Tablespoon butter
    1 1/2 pound ground chuck, browned/drained
    1/2 cup catsup
    2 cans tomato sauce (8 oz. size)
    8 oz. cottage cheese
    1/4 cup sour cream
    8 oz. cream cheese
    1/3 cup green onions
    1 Tablespoon green pepper
    salt/pepper to taste

    Combine the tomato sauce, catsup, salt, pepper and mix it with the ground chuck.
    Mix in another bowl the cottage cheese, sour cream,
    cream cheese, green onions, green peppers.

    Layer 1/2 cooked spaghetti then
    cheese mixture
    another layer 1/2 cooked spaghetti then
    meat and tomato mixture on top

    Bake uncovered in buttered casserole dish, 45 minutes at 350 *

    Tampico Chicken

    Boil some chicken breasts. Shred and reserve the liquid.

    Heat some olive oil in a skillet. Add the chicken, 1 tsp cumin, 1 tsp garlic powder, 1 tsp paprika, add 1/2 cup of the liquid, 1 tsp of cornstarch, 1/2 tsp of chipotle powder, and fresh chopped cilantro.

    Heat to boiling, stirring constantly for about 5 minutes.

    Serve fajita style with lettuce, diced tomatoes, refried beans, guacamole and shredded cheese.

    TAMPICO SHRIMP

    1 lb. fresh shrimp, peeled
    1 tbsp. vegetable oil
    3 1/2 tbsp. butter
    6 tbsp. fresh cilantro, minced
    6 tbsp. parsley, minced
    4 cloves garlic, minced
    4 tbsp. scallions, chopped
    1 fresh jalapeno pepper, minced
    2 tbsp. cumin
    4 tbsp. red salsa

    Melt butter and oil in large skillet. Mix all ingredients and stir-fry on high heat until shrimp turns pink and has curled. Serve with rice and (or) tortillas.

    Look at Rachel Ray’s area on the food tv web site. All her meals are 30 minutes and most are quite easy. Most recipe sites like food tv or allrecipes.com and most cookbooks give you approximate times for preparation. Having the ingredients all out is the key to efficient and fast food prep.
    You can broil any kind of fish in like 10 minutes. Pan fry thin boneless chicken in just a few minutes or even pan fry fish breaded or not in a few minutes. You can steam any kind of veggie while you making the fish or chicken. All pasta is quick and you can do a million things with it. The fact is that once you have the ingredients for whatever you want to make, there are few things that take longer than 30 minutes unless you are making lasagna or something like that.
    If you have all the ingredients, even something fancy like chicken marsala can be quick.

    Put hot cooked ground beef over a warm tortilla, then sprinkle with shredded Cheddar cheese. Top with shredded lettuce, chopped tomatoes and 1/2 jar of La Victoria ‘hot’ sauce.

    Clam Chowder.

    I’m not sure what neck of the woods you are in but if you are like me, and on the first warm sunny day, pulled the grill out of storage, I have the perfect grill recipe for you. I came across it on the Frigidaire site. Who knew they had such an awesome selection of recipes? The recipe is for BBQ salmon:

    Ingredients:
    2 Food-safe cedar planks (about 3/8" thick)
    1 large Salmon fillet (about 3 pounds)
    1 cup Asian Barbecue Glaze
    Kosher salt
    Pepper
    Canola oil

    Preparation:
    Soak the cedar planks in warm water for about two hours. Make sure they stay submerged. About 30 minutes before you are ready to start cooking, start your grill and prepare for direct cooking over a medium-hot fire (375-400º). Cut the salmon fillet in half width-wise. Season both sides of each half lightly with salt and pepper and brush with a light coat of oil. Place each half of the fillet on a cedar plank with the skin-side down.

    Put the planks directly over the coals/flame and close the lid. Cook until you start to see a milky white edge form near the thick end of the fillets (about 20 minutes at 375º). Brush the top of each fillet with a liberal coating of the glaze. Continue cooking for another five minutes.

    If you love to grill and love salmon, you’ll be making this every week. Hope you enjoy it as much as I have! :)
